Vegetarian pot pie

Vegetarian pizza pot pie or upside down pizza : as I read through my new cook book (Sheet Pan Suppers – thanks Veggie Mom Docs), I thought of a vegetarian pot pie because I then get to use my pretty pie dish. I was too lazy to make crust, but I had Whole Foods Pizza dough in the refrigerator (on my weekly shopping list). I made a spicy béchamel ( cumin and red chili in the butter with the usual béchamel measurements – 1tbsp butter , 1 tbsp flour, 1 cup milk) , added frozen corn, green beans, peas, boiled potatoes and a few fried up vegan hot dogs (Lightlife smartdogs). I added some good mozzarella and covered with the pizza dough – olive oil and some salt on top. 400 for 25 min or so and done ! Quite delicious as any combination of butter,dough and cheese should be 🙂

Another version has these baked in muffin tins- portable pot pies!
