My take on Orzo salad – otherwise defined as “dinner when you return home late and are bored of eating left-overs”
Put water with salt to boil – once it’s boiling, add orzo (or any small pasta ) and cook per directions
In a microwave bowl, add your favorite frozen veggies (I used peas, charred corn and green beans)- cover and cook for 5-10 min till done. I added some chopped preserved lemons (lemons pickled in salt for a few weeks)
I normally add good olive oil, chopped raw garlic, basil and Parmesan to this and it is delicious
Today, I added a tadka of butter, garlic, capers and thyme (thyme needs to be cooked as opposed to basil)
Mix everything together , top with some good Parmesan.
Took me 15 minutes to make and it was healthy and delicious (I had 50%veggies,50% pasta)
